Brewer’s Notes

Although I have brewed several beers of this style before, this recipe is a first where I’ve combined a variety of different bittering and flavoring hops into an IPA. The intent of this is to bring a piney, resinous bittering to the palate, with a hint of black currents and citrus flavor notes. By incorporating a complex malt bill to accompany the hoppy experience, I’m aiming to provide a full body flavor packed ale with slight sweetness accompanied by a well-balanced bittering/flavor profile that matches the elevated % alc by vol. Style Origins

An American IPA is a style characterized by the floral, fruity, citrus-like, piney or resinous hop character complemented by a balanced malty flavor. These type of beers usually have high bitterness, flavor, and aroma imparted by the hops, to counteract a higher than typical % alc abv. This style of beer has been the most-entered category at many beer festivals for over a decade, and is the top-selling craft beer

Grains: Smashed full of Canadian Pilsner Malts from Mississippi Mills, a local Ontario Maltster, this recipe boasts a full bodied ale with additions of Crystal 10, 45, and 77 malts, as well as Canadian white wheat malts. Other flavorful malty tones are complemented by trace additions of chocolate wheat malt, cara aroma, and toasted wheat malts.
Hops: Amarillo (pelletized hops), Brewer’s Gold (locally grown whole hops), and Chinook (locally grown whole hops)
Water: Labrador Spring Water, proprietary brewing salts
Yeast: WLP001 California Common Ale
